These vegan spinach artichoke puff pastry bites are flaky, creamy, and perfect for holiday gatherings. Easy to make and crowd-pleasing!

Ingredients
  • 1 sheet vegan puff pastry, thawed
  • 1/3 cup raw cashews (soaked in water for 2–4 hours or boiled for 10 minutes)
  • 2 tbsp water
  • 1 cup fresh spinach, chopped
  • 1/2 cup canned or jarred artichoke hearts, finely chopped
  • 1 clove garlic (minced)
  • 1 tsp olive oil
  • 1/4 tsp onion powder
  • 1/4 tsp salt (or to taste)
  • 1/8 tsp black pepper
  • Optional: 1 tbsp nutritional yeast or vegan parmesan for garnish
To Make
    Preheat the Oven:
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a mini muffin tin.
  2. Make the Cashew Cream:
  3. Drain the soaked cashews and blend with 2 tbsp water until smooth and creamy. Set aside.
  4. Prepare the Filling:
  5. Heat olive oil in a skillet over medium heat. Sauté the garlic until fragrant (about 1 minute).
  6. Add the spinach and cook until wilted, then stir in the chopped artichokes.
  7. Mix the spinach-artichoke mixture with the cashew cream, onion powder, salt, and pepper. Adjust seasoning as needed.
  8. Prepare the Puff Pastry:
  9. Roll out the puff pastry on a lightly floured surface. Cut into 16 squares (2-inch size).
  10. Press each square into a mini muffin tin or onto a baking sheet to form small cups.
  11. Assemble & Bake:
  12. Spoon 1–2 teaspoons of the spinach-artichoke filling into each puff pastry cup.
  13. Bake for 12–15 minutes, or until the pastry is golden brown and puffed.
  14. Serve:
  15. Let cool slightly before serving. Sprinkle with nutritional yeast or vegan parmesan, if desired.
