Description

Soft and chewy vegan pumpkin spice cookies packed with seasonal flavors. Easy to make, healthier, and perfect for holiday baking!

Ingredients
    Dry Ingredients
  • 1 1/2 cups oat flour (or almond flour for a nuttier flavor)
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice (or a mix of nutmeg, ginger, and cloves)
  • 1/4 tsp salt
  • Wet Ingredients
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1/3 cup maple syrup
  • 2 tbsp melted coconut oil or vegan butter
  • 1 tsp vanilla extract
To Make
    Preheat the oven:
  1. Set your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix the dry ingredients:
  3. In a medium bowl, whisk together the oat flour, baking powder, cinnamon, pumpkin pie spice, and salt.
  4. Combine the wet ingredients:
  5. In another bowl, mix the pumpkin puree, maple syrup, melted coconut oil, and vanilla extract until smooth.
  6. Make the dough:
  7. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. The dough should be soft but not too sticky.
  8. Shape the cookies:
  9. Scoop out tablespoon-sized portions of dough and roll them into balls. Flatten slightly with your hand or a fork.
  10. Bake:
  11. Place the cookies on the prepared baking sheet and bake for 12-14 minutes, or until the edges are set and lightly golden.
  12. Cool:
  13. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
